Muthiya

Ingredients:

1 and 1/2 cup wheat flour

3 tbsp gram flour/besan

200 gms grated carrots

200 gms grated bottle gourd/lauki

1 tsp jeera/cumin seeds roasted and powdered

1 tsp coriander seeds roasted and powdered

1/4 tsp Kashmiri red chilli powder

1/4 tsp Tikhalal red chilli powder

1/2 tsp haldi

2-3 tsp sugar

1 tsp fresh ginger paste or grated ginger

1/2 tsp green chilli paste

1 eno packet

1 lemon juice

2 tbsp oil

2 cup chopped coriander leaves

salt as per taste

Water


Season with:

2 tbsp oil

1 tbsp sesame seeds

1 tbsp mustard seeds

handful curry leaves

2 dry red chillies

chopped coriander leaves


Recipe:

1. In a big mixing bowl add wheat flour and gram flour. Mix well.

2. Add coriander and cumin seeds powder, red chilli powder, haldi, sugar, ginger and chilli paste, lemon juice, oil, salt and coriander leaves.

3. Then add grated lauki and carrots along with an eno packet. Mix well and prepare a dough out of it without adding any additional water. Lauki will leave its water.

4. Apply oil to the palm and make cylindrical rolls out of the dough and place it in the greased steamer plate as shown below:

5. Boil the pot of water and place the above greased steamer plate. Cover it with a lid and steam it for 20-25 mins. Do a toothpick check, prick the toothpick to the steamed dough and see. it should come out clean. Else steam it for more 5 mins.Again test and see.
6. Remove from the steamer plate and let it cool down completely. Chop them into thin slices.
7. In a pan heat oil. Add mustard seeds and let it splutter. Then add sesame seeds, curry leaves, red chillies and stir well. Later add the muthiya slices and toss them well so that the slices are coated well.
8. Cover and cook for 3-4 mins on medium flame. Finally garnish with chopped coriander leaves.
9. Healthy Muthiya is ready to serve.
