Egg Masala

 Ingredients:
4 hard boiled eggs, cut into halves
2 medium onions thin sliced
1 medium tomato finely chopped
2-3 cloves
2 pieces cinnamon
3-4 black peppercorns
2-3 green cardamoms
4 tbsp curd
2 tbsp ginger garlic paste
1 tsp coriander powder
1/2 tsp cumin powder
1/4 tsp haldi
1 tsp red chilli powder
1 tsp garam masala
2 tsp kasuri methi crushed
2 tbsp oil
2 tbsp ghee

Recipe:
1. In a pan, add 2 tbsp ghee. Fry the chopped onions till they are slightly golden brown. Take it out on kitchen tissues. Switch off the flame. Let the caramelised onions cool down so that they become crispy. Later blend them to coarse paste.
2. In a kadai heat 2tbsp oil. Add cloves, cinnamon, cardamoms, peppercorns and fry for a min.
3. Then giner garlic paste and mix well. Add finely chopped tomatoes and mix well.
4. Let it cook till they are soft and mushy. 
5. Then add haldi, coriander powder, cumin powder and red chilli powder and 1 tbsp kasuri methi. Mix well for 2-3 mins in lower flame.
6. Add whisked curd and mix well. Let it simmer on lower flame.
7. Add garam masala to the gravy and mix well. Cover and let it cook for 5 more mins.
8. Add egg halves to the gravy, keeping yellow sides down. Cover and let it cook for 2 mins.
9. Then after 2 mins, turn around all the eggs. Then finally sprinkle the rest of the kasuri methi over the eggs. Cover and let it cook for 5 mins. Switch off the flame later.
10. Delicious Simple Egg Masala is ready to be served with hot ghee phulkas.
