Veg Lasagna

Ingredients: For stir fried veggies: 1tbsp oil 2 tbsp garlic finely chopped 1 tbsp ginger finely chopped 2-3 green chillies finely chopped 1/3rd cup diced carrot 1/3rd cup diced raw p otatoes 1/3rd cup boiled sweet corn 1/3 cup chopped r ed bell pepper 1/3 cup chopped g reen bell pepper 1/4 cup diced paneer 1/3 cup broccoli - blanched 1 tsp black pepper 1 tsp paprika 1 tsp oregano 1 tsp red chilli flakes salt to taste a pinch of sugar Others: Red Pizza Sauce White Sauce 12 Lasagna Sheets grated  mozzarella  cheese grated processed cheese Recipe: 1. S et a kadai on medium high heat, add olive oil, garlic, ginger and green chillies. Cook for 1-2 minutes. 2. Add carrots and cook for 1-2 minutes on high heat. 3. Homemade Pan Pizza

Ingredients: 375 gm maida/all purpose flour 135 ml warm water 60 ml olive oil 1 tsp instant yeast 3 tsp sugar 1 tsp salt 1/4 green capsicum, thin slices length wise 1/4 red capsicum, thin slices length wise 1 medium onion, thin slices 1 medium tomato, thin slices 7-8 black/green olive slices(optional) Red chilli flakes Oregano Grated cheese - cheddar and mozzarella Pizza sauce White Pizza/Paste Sauce Olive oil Recipe: 1. Mix together water, salt, oil and sugar till it dissolves. Sprinkle with yeast and set aside 5 min then stir. 2. Pour water mixture over your flour and stir to combine with a spatula then knead by hand 2 minutes. Cover and let rise 4-5 hours at room temperature. 3. Transfer dough onto a floured surface and divide in half. Spread little oil on the palm and then fold each piece of dough 8 times (rotating book fold) and form a ball. Cheesy Eggplant Casserole

Ingredients: 1 big or 2 medium bell shaped eggplant/brinjal olive oil to spray/spread 1-2 tsp black pepper 1-2 tsp garlic powder 1-2 tsp italian seasonings 2-3 tomatoes sliced 2 tbsp white sauce pizza sauce grated mozzarella cheese salt to taste Recipe: 1. Clean and cut the eggplant in circles. Should have 12-14 pieces. Discard the top steam and bottom section of eggplant. 2. Take a baking tray and cover with the aluminum foil. Spread the cut eggplant over it.  3. Spray or spread olive oil over them. Then sprinkle black pepper and garlic powder and italian seasoning over it. 4. Bake/Roast for 10 mins per side at 500 degrees. 5. First layer: Now take a greased baking dish. Spread the pizza sauce at the bottom. 6. Second layer: Place half the roasted/baked eggplant over them. Single layer. Tomato Bruschetta

Ingredients: 1 baguette loaf 2 tbsp olive oil 6-7 garlic cloves crushed or minced 3-4 ripe tomatoes chopped 3-4 tbsp yellow capsicum finely chopped 1 tsp black pepper few mint leaves finely chopped salt to taste butter to spread grated cheese  Recipe: 1. In a tadka pan heat olive oil. Add the minced garlic cloves to the hot oil and roast them till light brown. 2. In a mixing bowl add chopped tomatoes and chopped yellow capsicum. 3. Add olive oil with garlic to the bowl and mix all together very well. 4. Add pepper powder, chopped mint leaves and salt. Mix well. Keep it aside. 5. Cut the bread loaf diagonally, each of one inch thickness. Roast them on both side using hot tawa. 6. Apply butter to the roasted bread. Place the mixture prepared above over it.  7. Sprinkle the grated cheese and serve immediately. 8. Enjoy yummy Tomato Bruschetta.

Baked Eggplant

Ingredients: 2 bell shaped medium sized eggplants/brinjals 100 gms crumbled paneer 2 red ripe tomatoes finely chopped 2 tbsp garlic crushed/finely chopped 1 tbsp coriander leaves finely chopped 1 tbsp dried parsley and basil 1 tsp black pepper powder 50 gms fresh bread crumbs 50 gms  cheddar   cheese grated 50 gms  mozzarella  cheese grated 1 tbsp olive oil 2 lemon juice salt to taste Recipe: 1. Wash the eggplants well and wipe them dry. 2. Cut into half lengthwise and scoop out the insides of eggplant with sharp knife. 3. Preheat the otg to 180 degrees. 4. Sprinkle the lemon juice over the scooped eggplant to prevent from discoloration. 5. Place the eggplant shells on a greased baking tray. Place the tray in the center rack of otg. 6. Bake the shells 180 degrees for 10-12 mins. 7. In a pan heat oil. Add chopped garlic and saute for a min. 8. Then add egg plant inside and cook for 3-5 mins.  9. Once they become soft add chopped tomatoes. Saute till tomatoes are also soft and mashed. 10

Makhani Macaroni

Ingredients: For Makhani Paste 1 tbsp Melted Butter/ghee 1/4 cup cashews 1/4 cup fresh cream 1 medium chopped onions 2 dry red chillies 2 green chillies 1/2 tbsp ginger-garlic paste 1 medium tomatoes chopped 1 tbsp kasuri methi powder 1 tsp nutmeg/jaiphal powder 1 tsp tikhalal red chilli powder 2 tsp kashmiri red chilli powder 1/2 tsp haldi 1 tsp tomato ketchup 1 tsp sugar Salt as per taste For Pasta: 2 tbsp olive oil 1 tbsp butter 4-5 cloves of garlic, mashed 1/4 cup cut in cubes veggies(green/yellow capsicum) 1/4 cup cut in cubes onions, tomatoes 1 tsp dried basil 1 tsp dried parsley 1 tsp red chilli flakes 1 tsp oregano 1 cup boiled Macaroni 2 cheese slice 1/2 cup grated processed cheese 1 tbsp veg mayo Salt as per taste Recipe: 1. Take a kadai, put 1 tbsp of ghee/butter.  Once it is heated, add the chopped onions, red chillies, green chillies. Saute well till onions turn brown. 2. Ingredients: 2 tbsp butter 4-5 cloves of garlic, mashed/crushed 1/4 cup boiled corn 1/4 cup finely chopped green, red, yellow capsicum 1/4 cup grated carrots 1/4 cup chopped onions 1/4 cup boiled broccoli 1/4 cup tomatoes 4-5 tbsp pasta sauce 2 tbsp tomato sauce 2 tbsp veg mayo Grated mozzarella cheese Grated cheddar cheese 1 tbsp butter 1 tsp Italian seasoning Salt as per taste White Sauce: 2 tbsp butter 2 tbsp maida 1 tbsp (10-12 cloves) crushed garlic 1/2 cup milk 2-3 slices of cheese salt to taste Recipe: 1. Boil water in a big saucepan and add 1 tsp salt to it. Add macaroni to the boiling water. Let the pasta cook for 3-5 mins. Stir occasionally. Once done remove pasta from hot water to ice cold water to stop further cooking. 2. For white sauce: In a small kadai heat butter on low to medium flame. Once the butter is melted add garlic and saute till brown.  3. Then add maida and mix well so no lumps are formed. Saute till color changes to light brown. Then add all the milk however

Ingredients: 8 bread slices 1 cup pasta sauce 1/2 cup grated mozzarella cheese 1/2 cup grated cheddar cheese 1/2 cup grated processed cheese 1 tsp Italian seasoning 2 tbsp bread crumbs White Sauce: 2 tbsp butter 2 tbsp maida 1 tbsp (10-12 cloves) crushed garlic 1/2 cup milk 2-3 slices of cheese salt to taste Vegetable stuffings: 1/4 cup boiled corn 1/4 cup finely chopped capsicum 1/4 cup grated carrots 1/4 cup chopped onions 1/4 cup tomatoes 1 tbsp butter 1 tsp Italian seasoning salt as per taste Recipe: 1. For white sauce: In a small kadai heat butter on low to medium flame. Once the butter is melted add garlic and saute till brown.  2. Then add maida and mix well so no lumps are formed. Saute till color changes to light brown. Then add all the milk however little at a time and whisk well into the mixture so no lumps. Add salt as per taste.  3. Ingredients: 1 tbsp All purpose flour/Maida 2 tbsp olive oil 1 tbsp butter 4-5 cloves of garlic, mashed 1/2 cup milk 1/4 cup cut in cubes veggies(carrot, green/yellow capsicum) 1/4 cup cut in cubes onions, tomatoes 2 tbsp chopped  broccoli 2 tbsp sweet corn 1 tsp dried basil 1 tsp dried parsley 1 tsp red chilli flakes 1 tsp oregano 1 cup of boiled Macaroni/Penne Pasta 2 cheese slice 1/2 cup grated processed cheese 2 tbsp veg mayo 1 tbsp fresh cream Salt as per taste Recipe: 1. Boil water in a big saucepan and add 1 tsp salt to it. Add macaroni or penne pasta to the boiling water. Let the pasta cook for 3-5 mins. Stir occasionally.  Once done remove pasta from hot water to ice cold water to stop further cooking. 2. Take a non stick kadai. Add olive oil. Heat it for a min and then add butter.  Once the butter melts, add garlic to it. keep stirring till it starts turning brown. 3. Add maida to the mixture. Keep stirring else it will burn. 4.
