Makhani Macaroni


Ingredients:
For Makhani Paste
1 tbsp Melted Butter/ghee
1/4 cup cashews
1/4 cup fresh cream
1 medium chopped onions
2 dry red chillies
2 green chillies
1/2 tbsp ginger-garlic paste
1 medium tomatoes chopped
1 tbsp kasuri methi powder
1 tsp nutmeg/jaiphal powder
1 tsp tikhalal red chilli powder
2 tsp kashmiri red chilli powder
1/2 tsp haldi
1 tsp tomato ketchup
1 tsp sugar
Salt as per taste

For Pasta:
2 tbsp olive oil
1 tbsp butter
4-5 cloves of garlic, mashed
1/4 cup cut in cubes veggies(green/yellow capsicum)
1/4 cup cut in cubes onions, tomatoes
1 tsp dried basil
1 tsp dried parsley
1 tsp red chilli flakes
1 tsp oregano
1 cup boiled Macaroni
2 cheese slice
1/2 cup grated processed cheese
1 tbsp veg mayo
Salt as per taste

Recipe:
1. Take a kadai, put 1 tbsp of ghee/butter. Once it is heated, add the chopped onions, red chillies, green chillies. Saute well till onions turn brown.
2. Then to this add ginger-garlic paste.Saute again.
3. Finally to this add chopped tomatoes. Saute till oil starts separating from sides.
4. First add 3/4 of the amount of kasuri methi powder.
5. Then add nutmeg powder, haldi, both type of red chilli powder, garam masala, sugar.Mix well.
6. To this add tomato ketchup. Keep a check on the spicy content. If the ketchup is spicy you can reduce the red chilli powder accordingly. Mix well.
7. Check the taste of the mixture and accordingly add salt as per taste.
8. Saute all the items together for 2-3 mins.
9. Add the cashews to the same mixture and mix well.
10. Let the mixture cool for sometime. Now blend the above prepared mixture to form a very smooth paste.
11. Once the paste is blended, we need to sieve the whole paste. This step is very much needed to give the makhani the super smooth texture. Once done keep it aside. 
12. Boil water in a big saucepan and add 1 tsp salt to it. Add macaroni to the boiling water. Let the pasta cook for 3-5 mins. Stir occasionally. 
Once done remove pasta from hot water to ice cold water to stop further cooking.
13. Take a non stick kadai. Add olive oil. Heat it for a min and then add butter. Once the butter melts, add garlic to it. keep stirring till it starts turning brown. 
14. Add all the veggies and saute for a min or 2 to remove the raw taste from the same.
15. Now add around 1 cup of the makhani paste prepared earlier and mix well. 
16. Check the taste of the mixture and accordingly add salt as per taste.
17. Add all the dried herbs, chilli flakes, oregano. Mix well. 
18. Cover and let it simmer for 2 mins. Stir occasionally.
19. Place cheese slices over the pasta to melt. Later add mayo. Mix well in the sauce.
20. Makhani Pasta is ready to relish.
21. Garnish the pasta with grated cheese. Enjoy hot!!!

**Store the rest of the makhani paste in airtight container and keep it in a fridge. Can be kept for 2 weeks.
