Aloo Pyaaz Kachori

Ingredients: Dry Masalas: 1 tsp dhaniya/corainder seeds 1 tsp kasoori methi 1 tsp saunf  1 tsp jeera seeds Aloo Pyaaz Filling:-  2 tbsp Oil a pinch hing - 1 pinch 2 garlic cloves finely chopped 3 tbsp besan 1 tsp red chilli powder 1 tsp amchoor powder 1/2 tsp black salt 1 tsp garam masala 1 onion finely chopped 1 tsp salt 2 nos green chillies finely chopped 2 potaoes boiled 1 tsp sugar 1 onion sliced 2 tbsp chopped coriander leaves Kachori Dough: 2 cups maida a pinch ajwain salt to taste 4 tbsp oil water to knead oil - to deep fry Recipe: 1. Dry roast coriander, cumin and saunf seeds and add them to the blender. 2. Add kasuri methi and grind them coarsely. Keep them aside. 3. Heat oil in a pan. Add the above powder and roast for 2 mins.  4. Add hing and garlic cloves and mix well. Roast them again for 2 mins. 5. Add besan and mix well. Roast all ingredients for 5 mins, till besan changes its color. 6. Then add chilli powder, amchoor powder, black salt, garam masala. Mix well and roast

Super Cheesy Balls

Ingredients: 300 gms mozzarella cheese 1 medium potato boiled 1 tbsp. cornflour 2 tsp chilli flakes 1 tsp oregano 1 tsp black pepper powder Salt to taste 1 tbsp cornflour + 2 tbsp water(slurry) Breadcrumbs to coat Oil for frying Recipe: 1. In a big mixing bowl add grated cheese, bolied potatoes, cornflour, salt, black pepper, oregano and chilli flakes. 2. Mix well to form a dough. Keep it aside for 10 mins covered. 3.  Take a spoonful of dough and make a ball out of it. Similarly make balls from the rest of the dough too. 4. Prepare slurry in a bowl and breadcrumbs in another bowl. Dip all balls into the slurry and coat with breadcrumbs. 5. Keep it aside in fridge for 30 mins. 6. Heat oil in a kadai for frying. Deep fry the balls until golden brown from all sides. Keep stirring and fry from all sides. Remove into kitchen tissue. 4. Hot Cheesy Balls are ready to relish.

  Ingredients: For dough: 1 cup wheat flour 1 cup maida 2 tbsp ghee salt to taste water to knead For Stuffing: 2 eggs (for each roll) 1 capsicum thin julienne 1 onion thin julienne slices 2 green chilies chopped finely 1/2 carrot thin julienne 2 tbsp veg mayo 1 tbsp tomato ketchup 1 tbsp pizza sauce 1 tsp powdered sugar 1 tbsp lemon juice salt to taste mustard sauce black pepper grated cheese(optional) Recipe: 1. Prepare a mayo sauce first. In a mixing bowl add mayo, ketchup, pizza sauce and sugar. Mix well and keep it aside for later use. 2. Prepare the dough: In a bowl add wheat flour and maida. Mix well. Add ghee to the flour.  3. Mix ghee well into the flour, the flour will hold shape. Now add water gradually and knead a soft dough. Homemade Pan Pizza

Ingredients: 375 gm maida/all purpose flour 135 ml warm water 60 ml olive oil 1 tsp instant yeast 3 tsp sugar 1 tsp salt 1/4 green capsicum, thin slices length wise 1/4 red capsicum, thin slices length wise 1 medium onion, thin slices 1 medium tomato, thin slices 7-8 black/green olive slices(optional) Red chilli flakes Oregano Grated cheese - cheddar and mozzarella Pizza sauce White Pizza/Paste Sauce Olive oil Recipe: 1. Mix together water, salt, oil and sugar till it dissolves. Sprinkle with yeast and set aside 5 min then stir. 2. Pour water mixture over your flour and stir to combine with a spatula then knead by hand 2 minutes. Classic, Toffee, Potli, Wonton shapes of Samosas Ingredients: For outer crust: 1 cup maida 1 tsp jeera seeds 2 tbsp ghee salt to taste water for kneading dough For samosa filling: 1 tbsp coriander seeds (dry roasted) 1 tbsp fennel/saunf seeds (dry roasted) 1/2 tbsp cumin/jeera seeds (dry roasted) 1 tbsp ghee 1 inch ginger finely chopped 3 green chilli finely chopped 10-12 raisins 2 tbsp peanuts lightly roasted & crushed 1/4 tsp haldi/turmeric powder 2 tsp red chilli powder a pinch of hing/asafoetida 4 medium potatoes (peeled, boiled, mashed) 1/2 cup green peas (boiled) 1/2 black pepper powder 1 tsp dry amchur/mango powder salt to taste oil for deep frying Recipe: 1. Hash Browns

Ingredients: 3 big potatoes 3-4 tbsp butter 1 cup mozzarella cheese 1 tsp red chilli powder 1 tsp black pepper powder 1 tsp red chilli flakes 1 tsp oregano 2 tsp garlic powder 3 tbsp rice flour 1 tbsp corn flour salt to taste oil for frying Recipe: 1. Peel and grate the raw potatoes. 2. Add them to a mixing bowl. Add cold water to it and leave for 10 mins. 3. Drain them well. Add the drained potatoes and add them a muslin cloth. Squeeze all them very well. 4. Heat butter in a pan. Add drained the potatoes to it. Mix and cook on low flame for 5 mins. 5. Remove them in a mixing bowl. Add grated mozzarella cheese to the same bowl. 6. Add rice flour, corn flour, chilli powder, pepper powder, garlic powder and salt. Mix well. 7. Take a small potato dough in hand and shape it to a slightly thinner than normal tikki in oval/rectangle shape. 8. Heat oil in a pan for shallow fry. Crispy Masala Paneer Cubes

  Ingredients: 1 litre milk 1 tsp oregano 1 tsp red chilli flakes 2-3 strands of coriander leaves (only leaves finely chopped) 1 tsp mixed herbs salt to taste 2 tbsp vinegar/lemon juice 3 tbsp water 1 tbsp maida/refined flour 1 tbsp corn flour water as required Salt & pepper powder to taste 1 cup breadcrumbs/roughly crushed cornflakes oil for deep frying Recipe: 1. Take a clean saucepan add milk and switch on the flame and keep it on medium heat, stir and bring to a boil. 2. Once boiled, low down the flame and add the oregano, red chilli flakes, mixed herbs, freshly chopped coriander leaves and salt to taste, mix well, stir and cook for last 3-4 minutes. 3. In a separate small bowl, add vinegar/lemon juice and water, mix well and add the mixture, slowly and gradually to the boiling milk, the milk will start to curdle and the whey will start to separate. 4. Aloo Sooji Poha Fingers

Ingredients: 1   cup  thin  poha/beaten rice 2   potato/aloo   boiled & mashed 1 tbsp sooji/rava 1 tbsp curd 1   chilli   finely chopped 2   clove   garlic   finely minced 1  tsp   mixed herbs 1 tsp   chilli flakes 1/2  tsp   pepper powder 2   tbsp   coriander leaves   finely chopped salt to taste 1/4 cup   maida 1 tbsp rice flour oil  for frying Recipe: 1. In a small mixing bowl add curd and 2 tsp water, whisk to smooth. To this add sooji and keep it aside for 10 mins. 2. In a  grinder take 1 cup poha and blend to a fine powder. 3. Add mashed potato, chopped chilli, garlic cloves, soaked sooji, mixed herbs, chilli flakes and pepper powder. 4. Also add chopped coriander leaves and salt. Mix well. 5. Combine well forming a soft dough. Keep it aside for 5 mins. 6. Now add maida and rice flour. Combine well into dough. 7. Grease palms with oil and pinch a small dough. 8. Moong Dal Pakodas

Ingredients: 1 cup yellow moong dal 1/2 cup finely chopped onions 1 green chilli finely chopped 1 tsp ginger grated 2 tsp red chilli powder 1 tsp grounded black pepper 1 tbsp grounded crushed coriander seeds 1 tsp ajwain 1 tsp saunf handful freshly chopped coriander leaves salt to taste Oil for frying Recipe: 1. Clean yellow moong dal. Soak dal in enough water for 4-5 hrs. 2. Drain all the water and grind to paste with minimum water. 3. In a mixing bowl, add the moong dal paste. 4. To this add salt. Now whisk the batter till it is fluffy. 5. Now add chopped onions, chillies, grated ginger, red chilli powder, grounded pepper, grounded coriander seeds, ajwain, saunf, freshly chopped coriander leaves. 6. Mix all ingredients together. Adjust salt as per taste. 7. Heat oil for frying. Once the oil is hot, reduce the flame a little and test the oil by adding a small piece of batter into the oil, the pakoda should immediately rise up & oil should be bubbling around the pakoda.  8

Gujiya(Karanji)

  Ingredients: For outer covering: 2 cup maida / plain flour ¼ cup chiroti or fine rava/semolina/suji  ¼ tsp salt 2 tbsp hot melted ghee water to knead 1 tsp oil to grease dough For stuffing: 1 tbsp ghee ½ cup rava/semolina/suji 2 tsp poppy seeds/khus khus 1 cup dry coconut/kopra grated 2 tbsp cashews chopped 2 tbsp almonds chopped 1 tsp cardamom powder 200 gms powdered sugar 200 gms home made khova Recipe: Steps for dough: 1.   In a large bowl take maida, rava/suji and salt. Mix well. 2. Now pour the hot ghee and mix well. 3. Crumble and mix well making sure the dough is moist. Need to hold the shape when pressed with a fist. 4. Cheesy Eggplant Casserole

Ingredients: 1 big or 2 medium bell shaped eggplant/brinjal olive oil to spray/spread 1-2 tsp black pepper 1-2 tsp garlic powder 1-2 tsp italian seasonings 2-3 tomatoes sliced 2 tbsp white sauce pizza sauce grated mozzarella cheese salt to taste Recipe: 1. Clean and cut the eggplant in circles. Should have 12-14 pieces. Discard the top steam and bottom section of eggplant. 2. Take a baking tray and cover with the aluminum foil. Spread the cut eggplant over it.  3. Spray or spread olive oil over them. Then sprinkle black pepper and garlic powder and italian seasoning over it. 4. Ingredients: 8 bread slices 4 cheese slices 200 gms grated mozzarella cheese 1/4 cup pizza sauce 2 medium onion finely chopped 2 medium red tomato finely chopped 2 tbsp coriander leaves finely chopped 3 green chillies finely chopped 1 tsp black pepper powder 1 tbsp tomato sauce 1 lemon juice salt to taste italian seasoning butter Recipe: 1. Take four slices of bread and remove the sides of them. Using the rolling pin, roll them to thin bread sheet. Keep it aside. 2. Namak Para

Ingredients: 500 gms maida 100 ml melted ghee or butter 1tsp salt 1tsp dry roasted jeera/cumin seeds water to knead Recipe: 1. In a mixing bowl add maida, roasted cumin seeds, salt. Mix well. 2. Add melted ghee or butter. Mix well and see the dough should hold shape in hand. 3. Adding little water at a time, knead a soft and tight dough. Grease the dough, cover and keep it aside for 30 mins. 4.  Take a big dough part and roll them out as thin chapati. 5. Using the pizza cutter, cut the rolled chapati to small diamond shapes. 6. Repeat the same process for rest of the dough too. 7. Heat oil in a deep kadai for frying. Drop the smal diamond shapes to the hot oil and fry them till golden brown. 8. Remove them in an absorbent paper to soak the excess oil and let them cool down. 9.  Once completely cooled store them in an air tight container. 10. Enjoy the Soft Namak Para as when required.

Instant Chakli

Ingredients: 1/2 cup suji 1 cup water 1 tbsp ghee or butter 1 cup rice flour 1/4 cup powdered roasted chana dal 1 tsp jeera seeds 1 tsp white sesame seeds 1 tsp salt 3/4 tsp kashmiri red chilli powder 1/2 tsp haldi water to knead Recipe: 1. In a pan heat 1 cup of water, let it start to simmer. Add to this butter or ghee. Mix well. Bring to boil. 2. To the above mixture add suji and stir continously to avoid lumps. In sometime it will thickhen and start leaving the pan. Our suji dough is prepared. 3. Remove it in a mixing bowl and try to crumble the suji dough using spoon as it is hot. Let it cool down. 4. To this add powdered roasted chana dal and rice flour. Mix all together using hand. 5. Then add salt, haldi, red chilli powder, jeera/cumin seeds, white sesame seeds. Mix well. 6. Knead a soft dough with the above mixture by adding little water at a time. 7. Cover and keep it aside for 10 mins. 8. Divide the dough into three equal parts. Grease the chakli maker with oil from all sides

Cheese Garlic Bread

Ingredients: 8 sandwich breads slices 100 gms processed grated cheese 2 tbsp green chilli finely chopped 3 tbsp garlic minced Garlic Butter: 1/2 cup soft salted butter 4 tbsp garlic minced 1 tbsp coriander leaves finely chopped Oregano-Garlic seasoning mix: 4 tbsp garlic powder 1 and1/2 tbsp oregano 1 tbsp dry basil powder 1 tbsp red chilli powder 1 tsp black pepper powder 1 tsp thyme/ rosemary leaves 1 tsp salt Recipe: 1. In a glass jar add all the ingredients given for oregano-garlic seasoning. Mix very well and keep the mix aside. 2. In a mixing bowl add soft butter. Then add garlic and coriander leaves. Mix well and garlic butter is ready. Keep it aside. 3. In a big mixing bowl add grated cheese. Then add chopped green chillies, minced garlic, 1 tbsp above prepared oregano garlic seasoning. Tomato Bruschetta

Ingredients: 1 baguette loaf 2 tbsp olive oil 6-7 garlic cloves crushed or minced 3-4 ripe tomatoes chopped 3-4 tbsp yellow capsicum finely chopped 1 tsp black pepper few mint leaves finely chopped salt to taste butter to spread grated cheese  Recipe: 1. In a tadka pan heat olive oil. Add the minced garlic cloves to the hot oil and roast them till light brown. 2. In a mixing bowl add chopped tomatoes and chopped yellow capsicum. 3. Add olive oil with garlic to the bowl and mix all together very well. 4. Add pepper powder, chopped mint leaves and salt. Mix well. Keep it aside. 5. Cut the bread loaf diagonally, each of one inch thickness. Roast them on both side using hot tawa. 6. Apply butter to the roasted bread. Place the mixture prepared above over it.  7. Sprinkle the grated cheese and serve immediately. 8. Enjoy yummy Tomato Bruschetta.

Gujarathi Fafda with Fried Chillies

Ingredients: 1 cup or 250 gms besan 1/2 tsp carom/ajwain 1 tsp black pepper powder 1/4 tsp haldi A pinch of hing 1/8 tsp baking powder 2-3 pinch baking soda 2 tbsp oil water salt as per taste oil for frying For fried chillies: 8 long green chilli(washed) 1 lemon juice salt to taste 1 tsp oil Recipe for Fafda: 1. Sieve besan in a mixing bowl. 2. Add salt as per taste, ajwain, haldi, baking powder, baking soda, pepper powder. 3. Add oil and mix the flour well. Try to make a ball out of the flour, it should get the shape. 4. Knead using little water at a time to medium soft dough. 5. Grease the palm and rub with oil on all sides of the dough and keep it aside for 30 mins. 6. Divide the dough into 7-8 small lemon size balls. 7. Take a ball and give a elongated shape with hands.
