Veg Lasagna
For stir fried veggies:
1tbsp oil
2 tbsp garlic finely chopped
1 tbsp ginger finely chopped
2-3 green chillies finely chopped
1/3rd cup diced carrot1/3rd cup diced raw potatoes
1/3rd cup boiled sweet corn
1/3 cup chopped red bell pepper
1/3 cup chopped green bell pepper
1/4 cup diced paneer
1/3 cup broccoli - blanched
1 tsp black pepper
1 tsp paprika
1 tsp oregano
1 tsp red chilli flakes
salt to taste
a pinch of sugar
Others:
12 Lasagna Sheets
grated mozzarella cheese
grated processed cheese
Recipe:
1. Set a kadai on medium high heat, add olive oil, garlic, ginger and green chillies. Cook for 1-2 minutes.
2. Add carrots and cook for 1-2 minutes on high heat.3. Further add the remaining veggies and cook them for 1-2 minutes on high heat.
4. Add salt, black pepper powder, oregano, chilli flakes, toss and cook for 1-2 minutes.
5. Finally add paneer cubes and toss again.
6. Stir-fried veggies are ready, keep aside to be used later.
To Assemble:
1. Spread little red sauce in a microwave safe bowl.
2. Add a lasagna sheet, further spread red sauce pasta and stir-fried veggies, spread a layer of white sauce and grate some cheese.
3. Next Layer with lasagna sheets, repeat the layering process until it reaches the rim of your baking dish.
4. Top them up by adding good amount of mozzarella or processed cheese.
5. Preheat the oven and bake in grill mode at 200 for 30-35 minutes and the cheese browns on the top.
6. Lasagna is ready, sprinkle little red chilli flakes and chopped basil/parsley. Let it cool down a bit for 10 mins.
7. Serve Lasagna by cutting in square and serve immediately.
