Crispy Masala Paneer Cubes

 

Ingredients:
1 litre milk
1 tsp oregano
1 tsp red chilli flakes
2-3 strands of coriander leaves (only leaves finely chopped)
1 tsp mixed herbs
salt to taste
2 tbsp vinegar/lemon juice
3 tbsp water
1 tbsp maida/refined flour
1 tbsp corn flour
water as required
Salt & pepper powder to taste
1 cup breadcrumbs/roughly crushed cornflakes
oil for deep frying

Recipe:
1. Take a clean saucepan add milk and switch on the flame and keep it on medium heat, stir and bring to a boil.
2. Once boiled, low down the flame and add the oregano, red chilli flakes, mixed herbs, freshly chopped coriander leaves and salt to taste, mix well, stir and cook for last 3-4 minutes.
3. In a separate small bowl, add vinegar/lemon juice and water, mix well and add the mixture, slowly and gradually to the boiling milk, the milk will start to curdle and the whey will start to separate.
4. Once the milk solids have separated from the whey, strain it by passing through a sieve, wash the collected milk solids with fresh water to remove the sour taste of vinegar.
5. Further divide them in two equal halves, put one half in one muslin cloth and remaining half in second muslin cloth, shape it in square and fold the cloth tightly from ends keeping the square shape intact.
6. Further keep it over each other in the sieve and place a heavy object over it for at least 4 hours, to remove excess whey and to form its shape.
7. After 4 hours of rest, remove the cloth and your herbed paneer is ready to be used, keep aside for further use.
8. When you are ready to prepare, cut the above prepared paneer into cubes.
9. Make a smooth refined flour slurry, by adding refined flour, corn flour and water, mix well to ensure no lumps, further add salt & pepper to taste.
10. Add salt & pepper to breadcrumbs and mix well.
11. Now, dip and coat the herbed paneer cubes in flour slurry, then crumb it well with breadcrumbs and deep fry them in hot oil, on medium high heat, until crisp and golden brown.
12. Our Crispy Masala Paneer Cubes are ready to be enjoyed with tomato sauce/ketchup.
