Homemade Pan Pizza

Ingredients:
375 gm maida/all purpose flour
135 ml warm water
60 ml olive oil
1 tsp instant yeast
3 tsp sugar
1 tsp salt
1/4 green capsicum, thin slices length wise
1/4 red capsicum, thin slices length wise
1 medium onion, thin slices
1 medium tomato, thin slices
7-8 black/green olive slices(optional)
Red chilli flakes
Oregano
Grated cheese - cheddar and mozzarella
Pizza sauce
White Pizza/Paste Sauce
Olive oil

Recipe:
1. Mix together water, salt, oil and sugar till it dissolves. Sprinkle with yeast and set aside 5 min then stir.
2. Pour water mixture over your flour and stir to combine with a spatula then knead by hand 2 minutes. Cover and let rise 4-5 hours at room temperature.
3. Transfer dough onto a floured surface and divide in half. Spread little oil on the palm and then fold each piece of dough 8 times (rotating book fold) and form a ball. In case the dough is little sticky take some flour in hand and apply to dough while folding the dough in.
4. Transfer to an oiled bowl, cover and refrigerate overnight or up to 7 days. Your dough is done.
5. Remove dough from the fridge 1 hour before you to prepare the pizza.
6. Sauté the chopped capsicum and onions in olive oil for 2 mins. Keep it aside.
7. Grate around 1/2 cup cheddar and 1/2 cup mozzarella cheese. Keep it aside.
8. Take the wide tawa or pan on which we need to prepare pizza. Spread little oil over the pan and sprinkle little flour over it. 
9. Now place one of the dough in the middle of the pan. Start spread the dough from all sides in round shape using fingers. Spread it till the end. Then make markings all over the flour except the corners using fork so that the dough is baked evenly from both the ends.
10. Keep the tawa/pan over the medium flame. Cover and let it bake for a 5 mins. Then flip the side and bake the other side for a 5 mins.
11. Switch off the flame. Flip it back to the fork mark side. Spread the prepared pizza sauce over it.
12. Then spread the prepared white sauce over it. Now spread the stir fried veggies over the same. Add tomato slices, olives over the veggies. 
13. Finally spread the grated cheese all over the toppings. Sprinkle chilli flakes and oregano over the toppings.
14. Switch on the gas to low-medium flame and cover the pizza and let it bake for 10 mins or till the cheese is melted.
15. Home made yummy pizza is ready to be served. Cut the pizza to 8 pieces and serve hot with tomato sauce/ketchup.
