Veg Mayo Sandwich
1 no grated carrots
2 tbsp shredded cabbage
1/2 green capsicum finely chopped
1 small onion finely chopped
3 tbsp boiled sweet corn
2 tbsp boiled peas
1/4 cup thick fresh cream/malai
1/2 cup veg mayo
1/2 tsp black pepper
1/2 tsp red chilli flakes
1/2 tsp mixed herbs (basil, parsley)
2 tbsp coriander leaves finely chopped
8-10 brown bread
Butter
Tomato ketchup/sauce
Salt as per taste
Recipe:
1. Take the bread slices and remove the sides of it (optional) and keep it aside.
2. In a large bowl, add carrots, cabbage, capsicum, sweet corn, peas and onions. Add coriander leaves.
3. Now add cream and mayo. To this add pepper powder, chilli flakes and mixed herbs.
3. Mix so that all the ingredients are combined well.
4. Now take a bread slice. First spread some butter and then spread 2 tbsp of the prepared veg mixture over it. Cover with another bread slice, firstly spread tomato ketchup/sauce on it and then press gently to avoid any breakage of slice.
5. Enjoy the sandwich by cutting it diagonally to half half and serve with tomato sauce.
**Can add some cheese between the bread over the mayo spread. Also can toast the bread before serving.
