Mumbai Special Pav Bhaji

Pav bhaji, is a fast food dish from India, consisting of a thick vegetable curry served with a soft bread roll. Pav bhaji has many variations in ingredients and garnishes, but is essentially a spiced mixture of mashed vegetables in a thick gravy, usually cooked on a flat griddle (tava) and served hot with a soft white bread roll.
Ingredients:
1 tbsp ghee
2 tbsp butter
1 tbsp oil
1 tbsp ginger-garlic paste
1 big onions finely chopped
3 big tomatoes chopped
2 medium tomatoes roughly chopped
3 peeled potatoes chopped
1 capsicum chopped
1 cup peas
2 carrots chopped
1 small cauliflower cleaned and chopped
1/2 beetroot chopped
3-4 dry red chilli soaked in water
3 tbsp Everest Pav Bhaji masala
1 tbsp kasuri methi powder
1 tsp tikhalal red chilli powder
1-2 tsp kashmiri red chilli powder
1 lemon juice
1 tsp jeera seeds
salt as per taste
Garnishing:
finely chopped coriander leaves 
onion finely chopped
lemon wedges
1 tsp of butter
serve with Ladi Pav

Recipe:
1. In a cooker heat oil. Add jeera seeds and let it splutter for a min. Add 1 tbsp pav bhaji masala. Saute for a min.
2. Then add chopped tomatoes, potatoes, capsicum, carrots, peas, cauliflower and beetroot. Add salt and pressure cook them for 4-5 whistles. Keep it aside.
3. Blend soaked red chillies with roughly chopped tomatoes to fine red paste.
4. Take a kadai, add ghee and butter to heat. Once it is heated, add chopped onions Saute well till onions turn soft.
5. Then to this add ginger-garlic paste. Saute again.
6. Add 2 tbsp of pav bhaji masala, red chilli powders and mix well for 2-3 mins.
7. Then add the red chilli and tomato paste and mix well.
8. Then add kasuri methi. Mix well. Saute for 2 mins till masala aroma comes.
9. Check the taste of the mixture and accordingly add salt as per taste.
10. Add boiled and lightly mashed veggies. Mix together.Saute all the items together for 5 mins.
9. Mash again the mixture so that the veggies mixes well with masala.
10. Bring the above bhaji to boil. Cover and let it simmer for 5 mins on low flame.
11. Add a blob of butter, sprinkle coriander leaves and add lemon juice.Mix well. Switch off the gas/flame.
12. Pav Bhaji is ready to serve. Garnish with chopped coriander leaves.
13. Serve bhaji hot garnished with butter and chopped coriander leaves along with butter roasted pav, finely chopped onions and lemon wedges. ENJOY!!!
