Aloo Baigan Ki Sabzi


Ingredients:

5-6 medium purple brinjal/eggplants

2-3 medium potatoes

2 medium tomatoes roughly chopped

1 green chillies

2 medium onions finely chopped

1 inch ginger chopped in juliennes

4-5 garlic cloves finely chopped

1 tsp jeera seeds

1 tsp saunf seeds

1 tsp Kashmiri red chilli powder

1 tsp Tikhalal red chilli powder

2 tsp coriander powder

1 tsp jeera powder

1 tsp garam masala

1/2 tsp haldi

1/2 cup water

Salt as per taste

2 tbsp Oil


Garnish with:

chopped coriander leaves


Recipe:

1. Clean and chop the brinjals to small cubes. Also peel, clean and chop the potatoes too into small cubes.

2. In a blender add chopped tomatoes and green chillies. Blend them together to smooth paste without adding any water.

3. In a kadai, add oil to heat. Add jeera and saunf seeds. Saute for a sec.

4. Then add chopped garlic and ginger juliennes. Saute till garlic turns brown.

5. Then add chopped onions and saute till onions are turned soft.

6. Add red chilli powder, haldi, coriander and jeera powder. Saute for a 2 mins.

7. Add potatoes and mix well. Add 1/4 cup of water to the same as the masala is very dry to let potatoes to boil.

8. Adjust salt as per the taste. Cover and let potatoes to cook. Stir occasionally.

9. Add the tomato and chilli puree to the masala and mix well.

10. Add chopped brinjals to the gravy now. Add rest 1/4 cup of water and mix well.  Add garam masala and let the gravy to simmer.

11. Cover and let brinjals to cook. Stir occasionally.

12. Once the brinjals are fully cooked, garnish with chopped coriander leaves.

13. Simple Aloo Baigan is ready to serve with hot rotis or phulkas.


** Can deep fry brinjals and potatoes in case we want to save veg cooking time.
