Egg Muffin
Ingredients:
5 whole eggs
1 medium onion finely chopped
1/4 cup green capsicum finely chopped
1/4 cup yellow capsicum finely chopped
2 tbsp carrots grated
1 small tomato finely chopped
2 green chilies finely chopped
1 tbsp coriander leaves chopped
1/2 tbsp black pepper
1/2 tbsp chaat masala
1/4 tsp haldi
4 tbsp grated cheese
salt to taste
oil
Recipe:
1. Preheat the oven at 200 degrees.
2. In a kadai,heat 1 tbsp of oil.
3. Add all the chopped veggies except tomatoes and carrots and saute for 2 mins.
4. Switch off the flame. Add carrots and tomatoes and mix with other veggies and keep it aside for cooling.
5. In a big mixing bowl, crack and add all eggs. Beat them properly.
6. Add chopped green chillies, coriander leaves black pepper powder, haldi, chaat masala and salt to the beaten eggs and mix well.
7. Once the veggies are cooled completely add them also to the beaten eggs and mix well.
8. Grease the muffin tray with oil.
9. Pour the egg mixture into the muffin tray using spoon.
10. Sprinkle grated cheese over the egg mixture.
11. Pop the muffin tray into the oven and bake for 20 mins until the top is firm.
12. Once done, remove from the oven. Keep it aside for 2 mins to cool a bit.
13. Enjoy the hot yummy fluffy egg muffin with hot ginger tea for breakfast.
