Tomato [Tamatar] Halwa

The tomato is consumed in diverse ways, including raw, as an ingredient in many dishes, sauces, salads, and drinks. While it is botanically a fruit, it is considered a vegetable for culinary purposes, which has caused some confusion. The fruit is rich in lycopene, which may have beneficial health effects.
Tomato in the form of a sweet dish,  turned out to be very delicious. This halwa is very simple to make and very easily finished. :)
Ingredients:
400 gms tomatoes or 3 cups tomato puree
75 gms or 6 tbsp ghee or butter
200 gms corn flour
400 gms sugar
2 tbsp each dry roasted almonds, cashews, pista
5 gms cardamon/elachi powder
2 drops red color
2 cup water

  1. Wash the tomatoes, remove the eye and make an incision on the lower side. Boil water and blanch the tomatoes for 2-3 minutes.
  2. Then cut the tomatoes into fine pieces and then blend them to puree. Strain this puree using the fine cloth and seperate the pulp.
  3. Add one cup of water to the corn flour and mix well. Add this mixture to the tomato puree. Mix well and set it aside.
  4. Mix the sugar along with one cup of water and bring it to boil for few mins.
  5. While this mixture starts boiling add in the tomato mixture to the same and mix well. Keep stiring until the mixture thickens.
  6. Add in the red color along with ghee or butter and stir it for a few mins until mixed well. Will get to see the shine in the mixture.
  7. Now add the roasted almonds, cashews and cardamon powder and mix well.
  8. Keep stiring till it thickens and starts leaving the sides of the pan.
  9. Now pour the mixture onto a greashed plate and set it aside until it gets cooled down.
  10. No need to place it in a refrigerator, let it be in room temp itself.
  11. After it is cooled down, it is ready to be served. Cut into diamond pieces and serve.
