Moong Dal ka Halwa


This Halwa is one dessert which is seen brushing shoulders with all the brownies, tarts, tiramisu , truffles and the likes on the modern parties or north Indian wedding menus. A traditional recipe which has survived the test of time well. 
It is definitely higher on calories but if you eat sensibly it makes an enjoyable dessert, and if you cook it sensibly.
All said about this, i finally got a chance to try my hands on it for the first time during this Ganesh festival.
Everyone in my family and my friends loved it.
Here goes the simple and easy recipe for the same:





Ingredients:
1 cup - Yellow moong dal, soaked and ground to a coarse paste 
1 cup - Ghee
1 tbsp - Gram flour (besan)
1 1/2 cups - Milk 
Saffron (kesar) a pinch
Roasted cashews for garnishing
1 cup - Sugar 
1 cup - Milkmaid
Green cardamom powder a pinch
Almonds & cashews cut into slivers 10-12

Recipe:
1. Heat ghee in a non-stick pan. Add gram flour and saute till it changes color. 
2. Add moong dal, lower heat and mix well. Sauté, stirring continuously, till golden brown or for 20-25 minutes.
3. On the other side heat ½ cup milk in a non-stick pan. Add generous pinch of saffron and mix well for 1 minute. Switch off heat.keep aside.
4. Heat sugar and 1 cup water in another non-stick pan. Cook till sugar dissolves completely. Keep aside.
5. Keep stirring the moong dal so that it does not stick on the pan.
6. Then add the cup of milkmaid.Mix well in the halwa.
7. Here you can add khoya (optional).Mix well.
7. Then add the water with sugar dissolved. Mix well till the dal soaks the water.
8. Later add saffron milk to halwa and mix well. Add remaining milk and keep stirring.
9. Add cardamom powder, almond & cashews slivers.
10. Mix well, cover and cook on low heat for 5 minutes, stirring once a while till all liquid is soaked into the halwa. Remove lid, mix once. Switch off heat and transfer in a serving dish.
11. Serve hot garnished with chandi ka vark (optional), saffron and remaining almond/cashews slivers.
